Here are three recipe ideas for cooking a spatchcock:
1. Lemon and Herb Spatchcock:
- Remove the backbone from a size 6 spatchcock and flatten it out.
- Mix together 3 cloves of minced garlic, 1 tbsp olive oil, the zest and juice of 2 lemons, 1 tsp dried thyme, 1 tsp dried rosemary, and 1 tsp salt.
- Rub the mixture all over the spatchcock, making sure to get it into all the crevices.
- Let the spatchcock marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat a grill to medium-high heat. Grill the spatchcock, skin-side down, for 20-25 minutes, or until the skin is crispy and golden-brown. Flip the spatchcock and grill for an additional 10-15 minutes, or until cooked through.
2. Spicy Spatchcock:
- Remove the backbone from a size 6 spatchcock and flatten it out.
- Mix together 2 tbsp olive oil, 1 tbsp smoked paprika, 1 tsp ground cumin, 1 tsp chili powder, 1 tsp salt, and 1/2 tsp black pepper.
- Rub the mixture all over the spatchcock, making sure to get it into all the crevices.
- Let the spatchcock marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat an oven to 200C.
- Place the spatchcock on a baking sheet and roast for 45 minutes, or until the skin is crispy and golden-brown, and the meat is cooked through.
3. Asian-inspired Spatchcock:
- Remove the backbone from a size 6 spatchcock and flatten it out.
- Mix together 2 tbsp soy sauce, 2 tbsp brown sugar, 2 cloves of minced garlic, 1 tbsp grated ginger, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1 tsp five-spice powder.
- Rub the mixture all over the spatchcock, making sure to get it into all the crevices.
- Let the spatchcock marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat a grill to medium-high heat. Grill the spatchcock, skin-side down, for 20-25 minutes, or until the skin is crispy and golden-brown. Flip the spatchcock and grill for an additional 10-15 minutes, or until cooked through.
Keep in mind that cooking times may vary depending on the heat of your grill or oven. Make sure to use a meat thermometer to check that the internal temperature of the spatchcock has reached at least 74C before serving it.
