Lemon Garlic Chicken Breast

Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
4 cloves of garlic, minced
1/4 cup chicken broth
1/4 cup lemon juice
2 tbsp butter
2 tbsp parsley, chopped


Instructions:
1. Season the chicken breasts with salt and pepper.
2. Heat the olive oil in a pan over medium-high heat.
3. Add the chicken breasts to the pan and cook for 3-4 minutes per side, or until golden brown and cooked through.
4. Remove the chicken from the pan and set aside.
5. In the same pan, add the garlic and sauté for 1-2 minutes.
6. Add the chicken broth and lemon juice to the pan and bring to a simmer.
7. Add the butter to the pan and stir until it is melted and the sauce is thickened.
8. Return the chicken breasts to the pan and spoon the sauce over them.
9. Sprinkle with chopped parsley and serve.

 

Spicy Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
1 tsp cumin powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
Salt and pepper, to taste
2 tbsp olive oil


Instructions:
1. Mix together the cumin powder, smoked paprika, garlic powder, onion powder, cayenne pepper, salt and pepper in a small bowl.
2. Rub the spice mixture all over the chicken breasts.
3. Heat the olive oil in a pan over medium-high heat.
4. Add the chicken breasts to the pan and cook for 3-4 minutes per side, or until golden brown and cooked through.
5. Serve hot with your choice of sides.

 

 Creamy Mushroom Chicken Breast:
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
8 oz sliced mushrooms
1/4 cup chicken broth
1/4 cup heavy cream
2 tbsp parsley, chopped

Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat the olive oil in a pan over medium-high heat.
3. Add the chicken breasts to the pan and cook for 3-4 minutes per side, or until golden brown and cooked through.
4. Remove the chicken from the pan and set aside.
5. In the same pan, add the mushrooms and sauté for 2-3 minutes.
6. Add the chicken broth and heavy cream to the pan and bring to a simmer.
7. Cook for 2-3 minutes or until the sauce thickens.
8. Return the chicken breasts to the pan and spoon the sauce over them.
9. Sprinkle with chopped parsley and serve.
